Paella Valenciana

Who likes Spanish food? We think, there is no person in the world who does not like it. Spanish cuisine is full of flavours – so many specialties with meat or fish, seafood – oh those calamares or gambas , fresh soups such as gaspacho, different types of rice – famous paella, typical Spanish dulces (engl. sweets), patatas bravas, salads etc. You can choose what you like, no matter if you’re a vegan, vegetarian, pescatarian or meat adorer. Spain and Spanish cuisine is for every person in this world.

Today, we are in Spanish mood and our post as well. We will cook Paella Valenciana.

IMG_20160606_181710Ingredients for 4 persons:

  • 300g paella rice
  • 400 g seafood mix (shrimps, squid, mussels)
  • 2-3 cloves garlic
  • 1 red pepper
  • 1 zucchini
  • 1 cup frozen green peas
  • 1 cup frozen green beans
  • 2 tbsp olive oil
  • pinch of saffron, salt, pepper, cayenne pepper, paella spice or colorant.

Ingredients for stock:

  • 1 onion
  • 1 tbsp olive oil
  • 200 g can tomato pate
  • 6 garlic cloves
  • 1 chicken stock cube



Clean all the ingredients. Cut cloves of garlic thinly sliced, onion, pepper and zucchini. For a stock preparation, heat the oil in a big pan over and add the onion, tomatoes, garlic and a few prawns. Cook for 3-4 mins, then pour in 2l of water and add chicken stock cube. Cook for about 30 minutes and then leave to cool down. In a meanwhile, take a big pan, the best is if you have one for paella, but if you don’t, you can use anything similar to it, it is important to be large enough. Pre-heat the oil in a pan and add the onion, to soften for 5 minutes. Add spices and stir together. Then, add in rice and cook about 1 minute to roast. Further, stir in the 1,5l of cooked stock and cook for 10 minutes, add vegetables and seafood, stir all together for a few minutes and leave it in the oven at 200ºC for about 10-15 minutes until brown a bit.
