Spring is the wonderful season, so many different fresh groceries you can find in the markets. Simply, we cannot wait for a weekend, and use the Saturday morning to make a tour to all famous markets here in Gent. Always looking for a fresh food.
We have found some time ago between all our food photos, one of the first dishes made and captured, before we decided even to start blogging and writing about healthy life style and easy cooking. We will try to post our recipes more frequently and surprise you with so many things.
Today, we will leave you easy recipe. When you come from work, school or training exhausted and hungry, the first thing you do is opening the fridge and taking whatever from, just to prevent the hunger, are we right?
Well, we have learned that we should not nibble before the meal, but also you need something pretty quick for a dinner otherwise you will be starving. For the preparation of this dish you need maximum 30 minutes.
Ingredients for 2 persons:
- 2 zucchini
- 1 bag of bismati rice
- 1 cup of frozen peas or from a can (80g)
- cheddar cheese
- salt, pepper, oregano, olive oil
Wash and cut zucchini in half, place them in baking pan, sprinkle the salt, pepper and oregano, pour a bit of oil on them and put in the oven for a 15-20 minutes at 200ºC (time depends on you, do you like more raw taste or well baked). In a meanwhile, put the bag with rice in a boiling water to cook in 14 minute (we usually use that type of rice because it is easy and fast to prepare). Once the rice is cooked, you can mix it with peas and spices in the separate pan and prepare the filling for zucchini. Take the zucchini out the oven, fill them with rice, place the cheese on top, and return in the oven to melt the cheese.
You can serve them with the rest of rice, add some salad and a dish is ready to eat.
