Mediterranean gluten free pasta

The most of you, during working week comes home exhausted and hungry…in the case when you do not have ready a lunch or dinner, then usually you’re taking the unhealthy quick meal or junk food, whatever in that moment.

This recipe is such a simple and quick, when you do not have an idea what to cook, let mix some ingredients which you have already in a fridge, do not allow yourself to eat bad.

All you need for two persons:

  • 250g gluten free pasta
  • 125g mozzarella cheese
  • 1 big tomato
  • 200g mushrooms
  • 1 cup of rucola

While you cook the pasta, cut the mushrooms, tomato and mozzarella into pieces. Pour the pasta in glass or metal baking pan, add tomato, mushrooms and 1/2 mozzarella, you can line up or just mix randomly. At the end line up mozzarella and bake at 200ºC for a 15-20 minutes, then pour the rucola on the top. You can leave to cool down a bit and then to serve a dish.
