Today was a green day! Already, I am talking about my green soup for a while to my friends and always asking for a recipe. So, it’s good time to share it finally with all of you.
The recipe, I got from my dear friend Ana, once we visited her in Valencia. We were delighted with a taste. From that day, already two years, we eat it every single week. I was experimenting with a recipe a bit, so here I will leave you my version. I hope, you will like and enjoy it as we do.
- 1 kg of zucchini
- 3-4 carrots
- 1/2 of leek
- 1 cup of celery leaves or 1 stick
- 3-4 broccoli (frozen)
- salt, pepper, vegeta (serbian spice)
Wash all vegetables, peel the carrots, I don’t peel zucchini but if you want, you can do it. Then, cut all vegetables into small pieces and put in a pot. Add enough water to cover all vegetables. Usually, at the begging, I put 1tsp of salt or vegeta, and later add according to your taste. Cook until vegetables are tender (around 15-20min), remove from the fire and blend it with a stick blender till smooth. Then, put it again on a fire, add pepper and may be more salt according to the taste. Stir about 5-10min and that’s it. Your green soup is made!
